Because It Can't Be Undone

I sat down a few hours ago to write a little post. That post is still not finished. It has been a good day, but as is typical these days, it has been busy. I suppose those of you with older children might tell me to get used to it.

Anyways, I felt the need to do something that couldn't be undone by the end of the day. That would be why I'm writing this little post. Such is not the case with the laundry and the dishes. As soon as I think I've caught up, I turn around to find a sink full of dishes or a hamper full of laundry. I've given up on the myth of being caught up. Still, it feels good to do something that is still done come nightfall.

So, I'm using this post to share the recipe for the cookies that I'm currently baking. Tony needs to bring a dessert to work tomorrow...

This recipe makes a ton! It is super easy and though there are several batches to bake, you can easily chase babies and toddlers while the cookies bake. Older children could probably do most of this by themselves. And, the cookies are yummy. And chocolate! Need I write more?

Chocolate Softies
2 Devil's food cake mixes
2/3 c. water
1 stick butter, melted
2 eggs
1 (12 oz.) pkg. white chocolate chips (semi-sweet can be substituted)
Add all ingredients mixing well. Drop by rounded teaspoons onto greased cookie sheet 2 inches apart. Bake at 350 for 9-12 minutes. Cool for one minute and then transfer to a cooling rack. Enjoy!

Cooking Up a Storm

Well, I'm not really cooking up a storm. But, we have had our fair share of thunderstorms around here, and I did microwave a quesadilla yesterday.

Seriously, I do cook. I do my best to cook things mostly from scratch. Don't expect to find a pot of sauce simmering on the stove all day, but I do my best.

Of course, in the summertime I do things a bit differently. Don't most people? I've never been invited to a chili cook-off during the summer months.

What do I like to cook in the summer? Well, we eat our fair share of hamburgers, hot dogs, pasta salad, green salads, and fruits. But, if you were to come to my house, I'd probably serve my favorite chicken enchiladas and "The" Pie. I'd add a salad, some rice, and chips and salsa. Because, hello, chips and salsa go with everything. Don't bother telling me otherwise. I won't believe you.


Here are my recipes:




My Favorite Enchiladas


(No, that isn't the proper name, but I'm missing my mom's recipe with the correct title.)




2 cups cooked and cubed chicken (By all means use a rotisserie chicken--yum.)
2 cans green chile enchilada sauce
3/4 of a 8 ounce package of cream cheese
2 cups cheddar cheese
6-8 tortillas (I like to use the whole wheat because they seem to have a better texture.)




In a large pan, combine the chicken, one can of sauce, cream cheese, and 1 cup of cheddar cheese. Cook over medium heat (while stirring) until the both cheeses have melted.




Pour a small amount of enchilada sauce into the bottom of a 9x13 baking dish. Fill the tortillas with the chicken mixture. Roll up the tortillas and place them seem side down in the baking dish. Cover with the remaining sauce and top with the rest of the cheddar. (I've been know to use extra sauce and extra cheese.)




Cook at 350 degrees until nice and bubbly. Enjoy!




Okay, now for the dessert, and please, you must try this as soon as possible, especially if you like cookie dough. And, if you don't like cookie dough, don't tell me, I'll think you are odd.




"The" Pie


1-18 oz. tube refrigerated chocolate chip cookie dough
2-8 oz. packages cream cheese softened
1/2 c. sugar
2 eggs
1 package Heath toffee bits


Preheat the oven to 325 degrees.Press the cookie dough into an ungreased 9-inch pie plate.In a large bowl, combine the cream cheese, sugar, eggs, and half a cup of the candy pieces.Pour over the top of the cookie dough.Bake for 30 minutes or until set.Cool completely and top with more candy pieces.Chill until ready to serve. (You definitely want to wait until the pie is chilled or you will be disappointed. We keep the pie in the freezer because we think it tastes better that way.)

"The" Pie


A few months ago, I found myself making a meal for a friend who'd recently had a beautiful baby girl. I made some of our favorites to share. Included in the meal were a large pan of chicken enchiladas, some rice, a salad, and a pie.

Except the pie was missing a piece, thanks to my husband.

Oh, he knew full well that I was taking the pie to friends. It is just that this pie is that good.

I found the recipe in the newspaper while we were still living in Arkansas. It was one of the dessert winners in the newspaper's Holiday Cookbook.

Technically, it is called Chocolate Chip Cookie Dough Pie. But, around here, we think that name is a tad misleading. The crust is made up of cookie dough, but the filling is more like a cheesecake. So, I'm taking to calling it The Pie. I'm nothing if not creative.

Here it it is....


The Pie


1-18 oz. tube refrigerated chocolate chip cookie dough

Kathy's Pizza (Easy Homemade Pizza Crust)


I recently tried this recipe and found it to be both easy and tasty. The fact that it requires no kneading will make it a regular at my house. I can't take credit for it, that goes to a lady named Kathy who attended our previous church.


Kathy's Pizza


1 1/3 cups warm (not hot) water

1 teaspoon sugar

1/2 teaspoon salt

2 packages instant yeast


Mix together with a wire whisk.


Add 3 cups of flour all at once. (I used a blend of wheat and white flour.) Mix with a fork until all of the flour is absorbed. Form a ball--do not knead. Cover the bowl with a towel and let raise 20 minutes.


Oil hands with olive oil. Lift dough onto a stone or oiled cookie sheet. Spread out and top as desired.


Bake at 425 degrees on bottom oven rack for 20 minutes.
